Fokhagymás-rozmaringos focaccia
Serves 6-8
• 1 tablespoon runny honey
• 1 x 7g sachet dried yeast
• 325ml tepid water
• 500g strong white bread flour, plus extra for dusting
• sea salt and freshly ground black pepper
• olive oil
• 2 cloves of garlic
• a few sprigs of fresh rosemary
• Add the honey and yeast to the tepid water and leave for a couple of minutes until it starts bubbling
• Pile the flour and 2 teaspoons sea salt into a large bowl and make a well in the centre
• Pour half of your yeast mixture into the well, and use a fork to gradually bring the flour in from the outside
• Once you get a stodgy, porridgey consistency, add the rest of the mixture and gradually incorporate all the flour to make a smooth dough
• Make the dough into a flat round shape, lightly dust the top, and leave to rest for 10 minutes
• Grease a baking tray (approximately 25cm by 35cm) well with olive oil and dust lightly with flour
• Roll or stretch the dough until it fits into the baking tray
• Peel the garlic clove
• Pick the rosemary leaves
• Pound the garlic and rosemary leaves in a pestle and mortar with a pinch of salt and pepper until all the garlic has broken down
• Add a lug of olive oil to the mixture then spoon it over the dough
• Use your fingers to smear and push the mixture over the bread, pushing your fingers right down to the bottom of the dish to give you little dimples in the dough

• 500g good-quality minced beef, pork, or (even better!) a mixture of the two
• 2 x 400g tins of chopped tomatoes
• sea salt and freshly ground black pepper
• a small bunch of fresh basil
• 100g Parmesan cheese
• 400-500g dried spaghetti or penne

Jamie forralt bora
• 2 clementines• peel of 1 lemon
• peel of 1 lime
• 250g caster sugar
• 6 whole cloves
• 1 cinnamon stick
• 3 fresh bay leaves
• 1 whole nutmeg
• 1 whole vanilla pod, halved
• 2 star anise
• 2 bottles of Chianti, or other Italian red wine
Peel large sections of peel from your clementines, lemon and lime using a speed peeler. Put the sugar in a large saucepan over a medium heat, add the pieces of peel and squeeze in the clementine juice. Add the cloves, cinnamon stick, bay leaves and about 10 to 12 gratings of nutmeg. Throw in your halved vanilla pod and stir in just enough red wine to cover the sugar. Let this simmer until the sugar has completely dissolved into the red wine and then bring to the boil. Keep on a rolling boil for about 4 to 5 minutes, or until you’ve got a beautiful thick syrup. The reason I’m doing this first is to create a wonderful flavour base by really getting the sugar and spices to infuse and blend well with the wine. It’s important to do make a syrup base first because it needs to be quite hot, and if you do this with both bottles of wine in there you’ll burn off the alcohol.
When your syrup is ready turn the heat down to low and add your star anise and both bottles of wine. Gently heat the wine and after around 5 minutes, when it’s warm and delicious, ladle it into glasses and serve.
Banana tarte tatin
Serves 6
• 60g unsalted butter
• 150g caster sugar
• 4 large bananas
• ¼ teaspoon ground cinnamon
• 1 orange
plain flour, for dusting
• 250g puff pastry
• optional: crème fraîche
• optional: vanilla ice cream and a few tablespoons of desiccated coconut
To make your caramel bananas
• Preheat your oven to 180°C/350°F/gas 4
• Cut your butter into cubes and put into a sturdy deep-sided baking tray approximately 19 x 30cm
• Place the tray on a low heat, let the butter melt, then add the sugar and stir constantly until completely combined
• Continue to cook for about 5 minutes or until the sugar has all dissolved and the mixture is golden and caramelized. By the time this happens the mixture will be roasting hot so be very careful and whatever you do, DON’T be tempted to put your fingers in the mixture as you’ll give yourself a nasty burn
• Meanwhile, peel the bananas, halve them lengthways, and lay them carefully on top of the golden caramel
• Remove from the heat, then sprinkle over the cinnamon and finely grate over the zest of half your orange
To make your pastry topping
• Dust a clean work surface and rolling pin with flour
• Rather than putting your pastry down flat and rolling it out, place it on its side (see the picture opposite) and roll it from there, as this will give you a lighter, crisper texture
• Roll it out until you have a rectangle shape about the same size as your tray and about
0.5cm thick
• Drape your pastry over your rolling pin and carefully lay it on the baking tray, gently tucking it around the bananas to make sure they’re well covered, with no gaps
• Using a knife or fork, prick the pastry a few times
• Place the tray at the top of the preheated oven for 25 to 30 minutes, until golden
To serve your tarte tatin
• When your tarte tatin is ready you must turn it out at once or it will end up sticking to the baking tray. Again, you want to be very careful and make sure you don’t burn yourself on that hot caramel mixture
• To turn the tarte out, cover your hand with a folded tea towel, carefully hold the tray with a serving plate or board on top and gently turn it over
• Using the tip of a knife, pull a corner of the pastry up to check if it’s all cooked underneath (if not, pop it back into the oven for another couple of minutes), then ease the whole thing out of the tray
• If using crème fraîche, put it into a bowl, grate over the rest of your orange zest and stir well
• If using vanilla ice cream, sprinkle a few tablespoons of desiccated coconut on a plate and quickly roll a scoop of ice cream in it until coated
• Serve your tarte tatin with a dollop of crème fraîche or coated ice cream and eat immediately!

Quick tomato macaroni cheese
Jamie's dinners, serves 4
• 340g macaroni
• 200g bread, preferably stale, for making breadcrumbs
• 800g super-ripe tomatoes
• 1 clove of garlic, peeled
• 2 large handfuls of fresh basil
• 55g sun-dried tomatoes, chopped
• 2 anchovies
• sea salt and freshly ground black pepper
• 3 handfuls of freshly grated Parmesan cheese
• 565ml single cream
• 1 tablespoon red wine vinegar
• ½ a nutmeg, grated
• 400g cow's milk mozzarella, broken up
• a handful of fresh thyme, leaves picked
extra virgin olive oil
Preheat your oven to 200ºC/400ºF/gas 6. Get a pan of salted boiling water going and cook your macaroni according to the packet instructions. Meanwhile, break your bread up, place it in the food processor and whiz it up to form breadcrumbs. Set aside. Wash your tomatoes and place them in the food processor with the garlic, basil, sun-dried tomatoes, anchovies and a good pinch of salt and pepper. Whiz up for 30 seconds. Then add 2 handfuls of the Parmesan, the cream, vinegar and grated nutmeg. Whiz until smooth and season carefully to taste so it's really yummy!
By this time your macaroni will probably be cooked, so drain it in a colander, saving some of the cooking water. Place the pasta back into the pan and pour over every last bit of the cheesy sauce. You want it to be quite loose because you'll be surprised how quickly the sauce will disappear inside the macaroni and will look dry. So add a few spoonfuls of the reserved cooking water. Now you need to get yourself a baking dish about 8–10cm deep – this could be an earthenware dish or even a shallow ovenproof pan. Pour the pasta straight into your baking dish and break the mozzarella into little pieces over the top. Mix the last handful of Parmesan with the thyme leaves and breadcrumbs and sprinkle evenly over the top of the dish. Drizzle generously with good extra virgin olive oil – this will give you a lovely crunch topping.
Place in the preheated oven for 20–25 minutes or until piping hot and golden on top. Serve straight away, sprinkled with a little extra Parmesan. Best eaten with a nice salad – and you'll love it.

Leek & potato soup

• 2 carrots
• 2 sticks of celery
• 2 medium onions
• 400g leeks
• 2 cloves of garlic 400g
• potatoes olive oil
• 2 chicken or vegetable stock cubes, preferably organic
• sea salt and freshly ground black pepper
To make your soup
. Peel and roughly slice the carrots
• Slice the celery
• Peel and roughly chop the onions
• Cut the ends off the leeks, quarter them lengthways, wash them under running water and cut them into 1cm slices
• Peel and slice the garlic
• Place a large pan on a high heat and add 2 tablespoons of olive oil
• Add all your chopped and sliced ingredients and mix together with a wooden spoon
• Cook for around 10 minutes with the lid askew, until the carrots have softened, but are still holding their shape, and the onion and leeks are lightly golden
• Peel the potatoes and cut them into 1cm dice
• Put the stock cubes into a jug or pan and pour in 1.8 litres of boiling water from the kettle
• Stir until the stock cubes are dissolved, then add to the vegetables
• Add your potatoes
• Give the soup a good stir and bring to the boil
• Reduce the heat and simmer for 10 minutes with the lid on
To serve your soup
. Remove the pan from the heat
• Season with salt and pepper
• Serve like this or pulse until smooth using a hand blender or
liquidizer

• 1 litre semi-skimmed milk
• 600g dried macaroni
• 8 tomatoes
• 150g freshly grated Cheddar cheese
• 100g freshly grated Parmesan cheese
• a few sprigs of fresh thyme, leaves picked
optional: a couple of splashes of Worcestershire sauce
• optional: a grating of nutmeg
• 3 big handfuls of fresh breadcrumbs
• olive oil
serves 8-10
• sea salt and freshly ground black pepper• 45g butter
• 3 heaped tablespoons plain flour
• 10 cloves of garlic, peeled and finely sliced
• 6 fresh bay leaves
• 1 litre semi-skimmed milk
• 600g dried macaroni
• 8 tomatoes
• 150g freshly grated Cheddar cheese
• 100g freshly grated Parmesan cheese
• a few sprigs of fresh thyme, leaves picked
optional: a couple of splashes of Worcestershire sauce
• optional: a grating of nutmeg
• 3 big handfuls of fresh breadcrumbs

Get a large pan of salted water on to boil. Melt the butter in a large ovenproof saucepan over a low heat, then add the flour and turn the heat up to medium, stirring all the time, until you get a paste – this is your roux. Add all the sliced garlic – don’t worry about the amount, because each slice will caramelize like toffee in the roux. Keep cooking and stirring until golden and the garlic is nice and sticky. Add the bay leaves and slowly whisk in the milk a little at a time to ensure you get a nice smooth sauce. Bring the mixture to the boil, then leave it on a low heat to simmer and tick away, stirring occasionally. Preheat your oven to 220ºC/425ºF/gas 7.
Add the pasta to the pan of boiling salted water and cook according to the packet instructions. Meanwhile, roughly chop the tomatoes on a board and season them well with salt and pepper. Drain the pasta and add it immediately to the sauce. Give it a good stir and take the pan off the heat. Stir in your grated cheeses, chopped tomatoes and thyme leaves. A little Worcestershire sauce added now is nice, and so is a little grating or two of nutmeg. Now work on the flavour – taste it and season it until it’s hitting the right spot. You want it to be slightly too wet because it will thicken up again in the oven, so add a splash of water if needed.
If you’ve made your sauce in an ovenproof casserole-type pan, leave everything in there; if not, transfer it to a deep earthenware dish. Bake it for 30 minutes in the oven, until golden, bubbling, crispy and delicious.

Zsírozz be egy nagy sütőpapírt. keverd habos krémmé a vajat a cukorral es üsd bele a tojás sárgákat, aztán add hozza a lisztet, a sütő- meg a kakaóport, alakul mar a tésztád. Gyúrd össze alaposan es jöhet a hűtés a frigóba.
A sutot 190 fokra melegítsd elő. A lisztezett deszkán nyújtsd ki a tésztád 1/3-részét, majd vágj ki a kisebbik szaggatóval 30 korongot /aki nagyot akar harapni, kevesebbel számoljon /. Sorakoztasd fel a csapatot a sütőpapíron es mindegyik közepébe tegyél egy csokikockat- fontos, ha kevesebbet csinálsz, akkor is használd fel az összes csokit! Nyújtsd ki a maradék tésztát es vágj ugyanannyi korongot a nagyobbik szaggatóval, pottyansd őket a csokik tetejére es az ujjaddal gyengéden tapaszd össze a szélén a két tésztaréteget, hogy a csoki ne folyjon ki közülük.
Süsd a már meleg sütőben 10 percet, aztán eheted forrón vagy hidegen.

Classic tomato spaghetti

This pasta sauce takes minutes to cook. What’s great about this recipe for beginner cooks is that once you’ve done it a few times you can add other simple ingredients to your basic tomato sauce to completely transform it. Check out the end of the recipe, where I’ve given you some ideas to get started.
To prepare your pasta

To cook your pasta

Add the garlic, chile, and basil stalks and give them a stir. When the garlic begins to brown slightly, add most of the basil leaves and the canned tomatoes. Turn the heat up high and stir for a minute. Season with salt and pepper. Drain the spaghetti in a colander then transfer it to the pan of sauce and stir well. Taste and add more salt and pepper if you think it needs it. Divide the pasta between your bowls, or put it on the table in a large serving dish and let everyone help themselves. Roughly tear over the remaining basil leaves and grate over some Parmesan.
These can be added to your tomato sauce when it’s finished. Just stir in and warm through:
• Add a handful of baby spinach leaves to the sauce at the same time you add the pasta—when the leaves have wilted remove from the heat and serve with some crumbled goat’s cheese on top.
• A few handfuls of cooked shrimp and a handful of chopped arugula with the juice of ½ a lemon.
• A can of tuna drained and flaked into the sauce with ½ teaspoon of ground cinnamon, some black olives and the juice of ½ a lemon.
• A handful of fresh or frozen peas and fava beans

Separate the eggs, putting the whites into one bowl and the yolks into another.Combine the plain flour, baking powder and milk with the egg yolks and mix until it forms a smooth, thick batter. Csokoládés clafoutis cukorban sült naranccsal

- 2 friss mentaág letépkedett levelei
- 2 marék frissen reszelt parmezán sajt
Mindenekelőtt forralj fel egy nagy faék sós vizet, és főzd meg benne a tésztát a csomagoláson megadott utasítás szerint. Egy tálban verd fel a tojást a tejszínnel együtt, és tegyél vele sót és borsot. A pancettát vagy bacont dobd be egy serpenyőbe, és pirítsd ropogósra, aranybarnára.
